The Snack That Saves the Afternoon

Every house needs a snack you can grab on the way out the door. These energy bites are ours. They're chewy, a little chocolatey, and filling enough to get you from lunch to dinner.

You mix everything in one bowl, chill it, and roll it into balls. There's no oven and no cooking, which also means the raw honey stays raw.

The honey does double duty here. It sweetens the bites, and its natural stickiness holds everything together with no other syrup needed.

Honey Oat Energy Bites

Chewy, no-bake, and lunchbox-ready.

Prep10 min Chill30 min Total40 min YieldAbout 18 bites

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy peanut butter, or any nut or seed butter
  • 1/3 cup raw honey (we use our Beeholden Farms raw honey)
  • 1/2 cup mini chocolate chips
  • 2 tablespoons ground flaxseed or chia seeds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Equipment: a tablespoon scoop for even bites.

Instructions

  1. Mix. Stir all of the ingredients together in a medium bowl until evenly combined. It will look a little loose at first; keep stirring.
  2. Chill. Cover and refrigerate for 30 minutes. This firms up the mixture so it's easy to roll.
  3. Roll. Scoop tablespoon-sized portions and roll them into 1-inch balls between your palms. Damp hands help if the mixture sticks.
  4. Store. Transfer to an airtight container and keep in the fridge.

Recipe notes: If the mixture is too dry to hold together, add another tablespoon of nut butter. If it's too sticky, add a tablespoon or two more oats. Natural peanut butter can be runny, so give it a good stir first.

Mix-In Ideas

  • Trail mix: swap the chocolate chips for raisins, chopped almonds, and sunflower seeds.
  • Coconut: add 1/4 cup shredded coconut and roll the finished bites in more.
  • Cinnamon raisin: use raisins and add 1/2 teaspoon cinnamon.
  • Nut-free: use sunflower seed butter for school lunches. Check your chocolate chips too.

Storage and Safety Tips

  • Refrigerate in an airtight container for up to 1 week. Glass containers keep them fresh and easy to grab.
  • Freeze for up to 3 months. They thaw in about 10 minutes, or can be eaten straight from the freezer.
  • Not for babies. Honey in any form should never be given to children under 12 months old. These are a great snack for older kids, but keep them away from little ones under one.
